🥗 What Is Kerabu?

Kerabu is a traditional Malay-style salad made with raw vegetables, herbs, spices, and usually a punchy dressing. It’s light, bright, and packed with umami and spice.

Common ingredients include:

  • Shredded cucumber, papaya, or pomelo

  • Torch ginger flower and mint

  • Dried shrimp or anchovy powder

  • Tamarind juice or lime

  • Chilli, sugar, salt

At Nanyang Blossom, our Oriental Pomelo Salad is our take on this — featuring:

  • Fresh pomelo pearls

  • Torch ginger & kaffir lime

  • Housemade calamansi dressing

  • Crispy shallots and toasted coconut

🌶️ What Is Rempah?

Rempah is the beating heart of Southeast Asian cooking. It’s a richly spiced paste made by grinding a blend of:

  • Shallots

  • Garlic

  • Ginger

  • Galangal

  • Dried chillies

  • Candlenuts

  • Lemongrass

  • Belacan (shrimp paste)

This paste is slowly sautéed until deeply fragrant — and used as the flavour base in many curries, stir-fries, and braises.

At Nanyang Blossom, rempah plays a key role in dishes like:

  • Beef Rendang – slow-cooked 16 hours for rich depth

  • Soft-Shell Crab with Chilli Oil – rempah infused in the oil

  • Seafood Claypot Curry (private dining) – bold and aromatic
