🇲🇾 The Inspiration: Malaysian “Teh Ais” & Assam Tea

If you’ve walked the streets of Penang or Kuala Lumpur, you’ve probably had a tall glass of iced assam tea — tangy, tannic, and a little bit sweet. It’s often paired with hawker food: think spicy curry noodles, fried squid, or rojak salad.

Chef Daren Liew wanted to bottle the essence of that memory, but with a grown-up twist. The result? A cocktail that’s deep, smoky, slightly citrusy, and just complex enough to keep you sipping.


🍸 The Ingredients

  • Whisky – the smoky base that adds warmth and depth

  • Assam tea reduction – brewed strong and slow, with slight acidity

  • Burnt orange peel – caramelised to release oils and bitterness

  • Palm sugar – a touch of sweetness for balance

  • Smoked glass finish – served with a light smoke cap for full aroma

Every element is measured, mixed, and flamed to order, creating a multi-sensory experience from the first whiff to the last sip.
